In case of a big project that also include contracts like governance that can no be demonstrated (because have a time component inlcuded and also high number of partecipant required) it is okey to instead present them with splide that explane how they function?

  Yes, this is perfectly fine. I would recommend having both a video explaining your general project and then having a few slides after as well, explaining more in detail that specific part that can not be demonstrated.
